1. GENERAL HOME ECONOMICS (HE)
HME HE-00 General Home Economics Practical Experience
Course Description: Students must have a minimum of 240 hours in a combination of such experiences as food services, domestic and personal services, sewing, etc. The student should be supervised, receive instruction and be able to demonstrate proficiency in handling and carrying out related duties in order to obtain credit.

2. COOKING AND FOOD SERVICES (FS)
HME FS-00 Cooking and Food Services Practical Experience
Course Description: Students must have a minimum of 240 hours of practical experience cooking and food services. The student should be supervised, receive instruction and be able to demonstrate proficiency in handling and carrying out related duties in order to obtain credit.

HME FS-01 Diet, Nutrition and Meals
Course Description: This course teaches students what constitutes a healthy and nutritious diet, and emphasizes the importance of eating nutritious foods and avoiding "junk" foods. Important mealtime tips are covered as well.

HME FS-02 General Kitchen Management and Cooking
Course Description: In this course the student not only learns how to manage a kitchen, but also discovers many helpful and practical tips and cooking lessons.

HME FS-03 Food Purchasing
Course Description: The student learns the many important details involved in wise food shopping, as well as how to set up a comprehensive shopping list and keep a food inventory. Students should be personally involved in, and capable of making, basic food purchases to obtain credit for this course.

HME FS-04 Menu Planning and Food Preparation
Course Description: A useful course on menus and meal planning. Students must plan out a two-week menu complete with shopping list of items not in stock.

HME FS-05 Kitchen Cleanliness and Safety
Course Description: Students learn how to run a clean and safe kitchen and dining room, maintain good personal hygiene, use safe food preparation methods, maintain and inspect food storage, maintain a high standard of kitchen cleanliness.

HME FS-06 Organizational Charts for Kitchen Use
Course Description: The student should be aware of where to find or make these helpful charts and lists for organizing a kitchen.

HME FS-07 Institutional Cooking
Course Description: Students must have six weeks of experience cooking for more than 30 people to qualify for credits.

HME FS-08 Recipes
Course Description: Student should have a working knowledge of how to find, use and adapt recipes. Students will need to be able to demonstrate that they can cook from a cookbook. They should also begin collecting their own recipes in an organized manner.

HME FS-09 International Cuisine
Course Description: To obtain credits for this course the student should be able to prepare three international meals, such as: Chinese, Italian, Indian, etc.; or three national dishes of the country they live in.

Course Description: Students must learn wise purchasing, storage and use of dairy products.

HME FS-11 Meat, Fish and Poultry
Course Description: Students must learn how to shop for quality, economy, value for money, be familiar with various cuts of meat, plus know various approaches to cooking and serving meat, learn how to carve meat, etc. Awareness of food poisoning and disease dangers is essential.

HME FS-12 Fruits and Vegetables
Course Description: Students should be able to make wise and safe purchases of various fruits and vegetables, learning how to pick desired ripeness, etc. They should learn how to prepare fruits and vegetables to reduce the risk of any contaminates on the produce. They should learn various cooking techniques to preserve maximum nutritional value, etc.

HME FS-13 Sandwiches and Salads
Course Description: Students must learn to make various sandwiches and salads, as well as learn to how to serve them attractively.

HME FS-14 Baking Bread, Cake and Pastries
Course Description: Students learn how to bake various breads, cakes and pastries.

HME FS-15 Manners and Etiquette
Course Description: An etiquette course about good table manners especially while dining out, or as guests at social functions.

3. DOMESTIC AND PERSONAL SERVICE (DM)
HME DM-01 Domestic Skills
Course Description: This course covers useful tips on general home care, including care of household equipment and appliances, furniture, special surfaces, floors, carpets and rugs, and learning about different cleaning agents and tools. Also covered are lessons on economizing and caring for storage.

HME DM-02 Clothing Care and Cleaning
Course Description: Lessons on many aspects of clothing care are included in this course.

HME DM-03 Interior Decorating
Course Description: Home decorating tips, choosing colors, dressing up windows, floors and furniture, flower care and arranging, and more.

HME DM-04 Home Business Management
Course Description: The student studies how to manage household money and budget available funds.

HME DM-05 Specialty Shopping
Course Description: Practical advice on specialty shopping for people's personal needs.

HME DM-06 Hair Care
Course Description: This course covers the importance of diligent hair care.
Credits: 1
HME DM-07 Haircutting
Course Description: The student must demonstrate proficiency in providing a good basic haircut for both sexes and all hair types.

4. SEWING AND NEEDLEWORK (SW)
HME SW-01 Sewing Skills
Course Description: This course covers basic sewing procedures and equipment, using patterns, making alterations, learning clothing design, shopping for fabric, etc.

HME SW-02 Adult's Clothing Construction
Course Description: Students must successfully execute the making of an item of adult's clothing.
Credits: 2
HME SW-03 Children's Clothing Construction
Course Description: Students must successfully execute the making of a child's item of clothing.

HME SW-04 Furniture Covering
Course Description: The student must successfully cover a piece of furniture.
Credits: 2
HME SW-05 Needlework
Course Description: This course covers decorative and embroidery stitches, appliqus, crocheting, and knitting. Students must demonstrate basic proficiency in at least one of these needlework skills, and execute the making of an article or articles requiring specialized skill.

HME SW-06 Costume and Specialty Sewing
Course Description: Students who have extensive experience in designing and sewing costumes for stage productions, or who work on special sewing projects such as for puppets shows, special drapery, utility covers, special clothing repairs, etc., are eligible for credits in this course. Credits awarded according to hours of experience (40 hours required), quality of work and skill demonstrated.

HME SW-07 Curtains and Drapery
Course Description: Student must make and hang a set of curtains to qualify for credits.
